Giant Sea Scallops, Black Bean, Cucumber & Arugula salad with sunflower seeds.
For dressing, I added 1/2 tsp of Bragg’s Liquid Aminos since the seasoned black  beans provided a lot of flavor.  Delicious, light, filling, fresh!
Approx macros (with 8oz scallops & 1/4 cup organic black beans): 48g protein, 11g carbs, 5g fat

Meal Prep TIP: If you’re like me and often rushing in the morning, fire up the oven, grab a muffin or mini loaf pan and make Turkey Omelette Cupcakes (or Loaves).  
Your breakfast cooks while you’re showering and getting dressed. Also, a great way to get kids to eat their veggies in the morning!
Ingredients: 2oz low sodium turkey meat, 1 egg, 4 egg whites, 1/2 jalapeno, red & orange sweet bell peppers, arugula, cumin.
Steps: (1) spray muffin/loaf pan with olive oil; (2) Place ingredients WITHOUT eggs into muffin/loaf cups; (3) Mix eggs together and pour over mixture in muffin/load cups; (4) Bake in oven for about 15 minutes at 385F.
